At first I was going to let this sweet little holiday pass by unmentioned, because I don't like coconut, which is what most of us think of when we think of macaroons. Then I did a little research and discovered that it doesn't need to have coconut to be a macaroon. In fact, a macaroon is a cookie made with egg whites, water, sugar and powdered almonds. According to Wikipedia, the earliest recipes for macaroons date to the early 16th century.  Various recipes have roots in Scotland, France, India, Ireland, and Turkey.  The coconut macaroon is most popular in North America, Australia, the Netherlands and Germany.
